I'm relatively new to smoking and started at 225 That's was fine for me with ribs since you can start them and serve them the same day, but butts/briskets/chucks take way too long Went up to 250 for a while, but big pieces were still overnight cooks, which i'd prefer to avoid. But i smoke things on a number of things beside my wsm and i pretty much settle on where they settle as long as it generally is anywhere around those temps if that makes sense
I just smoked a 5.16 lb brisket last weekend I fired up the wsm using the minion method, and added the meat at the same time I wanted as much smoke time as possible I brought the pit temperature up to about 225, and kept it there
I took it off and put in foil and let it rest when the internal temperature hit 190
Total cook time was 6 1/2 hours for about 1.25 hours/pound And figuring your 18 lb brisket at a ball park 1 1/2 hours per pound average.thats 27 hours. This produces food including brisket that have excellent results How long does a brisket typically take to smoke and what temperatures do you guys use

What i really would like to ask is at about how many hrs into the cook with the brisket reach 170 degrees I hope to smoke at or near 225 I plan on foiling at that point
